A lot of you are calling NCOs 'Sir'. This is WRONG!
You only address Officers, Warrant Officers (Sergeant Majors) and Civilian Instructors 'Sir'. Staff Sergeants and downwards are addressed by rank. If you're senior to whoever you're talking to, you can call them whatever you want.
Lets do this properly, eh?

Just a point for us Nazi lot (although I think most of you have it), you always a dress a superior as 'Herr (their rank)'. So if a Corporal wanted to adress me, he would call me 'Herr Ärtzlichstabsfeldwebel'. If your SS, the SS at the begining of your rank is dropped. If you wish to adress an inferior, just call them by their rank, again missing the SS, and do not place Herr in front of it.

Also to add on to Strummie's post. Medical doctors may also be referred to as 'Herr Doktor.' This is partly due to the length of medical ranks and the fact that doctors have earned the degree and title of a being a medical professional. ~Doc
No I have to agree, people do get the ranks a little mixed up here from time to time, I myself messing up at the very beginning of this place being made. ~Danny
